Masale bhat

Its a traditional Maharashtrian Pulav cooked with spices and specific vegetables.

Servings : 4 Persons


Ingredients: 
for making masala-1 tspn coriander seeds + ½ tspn cumin seeds +5-6 tbspn dry coconut
1 ½ cup basmati rice
2 tbspn oil
½ tspn mustard seeds
5-6 curry leaves
¼ tspn asafetida
2 tspn goda masala
½ tspn red chilly powder
1-2 tebalspoon yogurt (curd)
8-10 cashewnuts
¼ cup green peas
5-6 florets of cauliflower 


Method: 
1. Roast coriander seeds, cumin seeds and dry coconut till aromatic. Don’t use oil. Let it cool down and grind to make fine powder. 
2. heat oil in a saucepan. Add mustard seeds. Let it crackle. Add curry leaves and asafetida. Add soaked rice and stir well.
3. Add ground masala. Add goda masala,turmeric powder,red chilly powder and stir.
4. Add vegetables,cashewnuts and yogurt. Add salt and stir for 2-3 minutes.
5. Add double water of the total quantity of rice (here 3 cups).
Cover with a lid and let it cook completely on medium heat.
6. Garnish with fresh grated coconut and chopped coriander leaves. Serve rice with some ghee on it. 

Tip: 
Stir rice till rice grains separate so that you will get a nice fluffy rice with separate grains.
You can use tindora or bringles instead of green peas and cauliflower.
Masalebhat, jilbi and matta or masalebhat and shrikhand-puri is a very good traditional combination for special occasion.
